Grilled Veggie Wraps

Meatless Monday’s are just getting better and better each week and we are loving it. These grilled veggies wraps are so good you don’t miss the meat at ALL. We loaded this wrap with so many delicious veggies and paired it with a delicious side.

Ingredients

  • 2 Whole Wheat or White Tortillas

  • 2 Cups Mushrooms, sliced

  • 1 Cup Cheddar Cheese, shredded

  • 1 Cup Spinach

  • 1 Roma Tomato, chopped

  • 3/4 Cup Alfalfa Sprouts

  • 3/4 Cup Red Onion, sliced

  • 1/2 Cup Red Pepper, sliced

  • 1/2 Cup Green Pepper, sliced

  • 1/2 Cup SW Ranch Dressing

  • 1-2 Tsp. Margarine

  • Salt & Pepper to taste

Directions

  • In a medium pan, melt margarine and add mushrooms, onions, peppers and spinach. Season with salt and pepper. Sauté until fully cooked.

  • While the veggies are cooking, plug in your panini maker and heat.

  • Lay out 2 tortillas and spread the SW ranch generously in the middle. Top with the cheddar the evenly spread the sautéed veggies over top. Lastly, add the tomato and alfalfa sprouts.

  • Roll up the tortilla tight.

  • Spray the heated panini press with cooking spray the lay the rolled tortillas and close. Cook until nice grill marks are evident and cheese is likely melted. Remove, cut in 1/2 and serve with desired side dish.
