Grilled Egg & Cheese Sammies

Sometimes there is nothing better then a simple breakfast sandwich. No bells, no whistles .. just a good ol’ classic Egg & Cheese sandwich. That is exactly what this is and let me tell ya, it is delicious!

Serving Size: 2 Sammies

Ingredients

  • 4 Slices of Bread

  • 6 Eggs

  • 3/4 Cup Cheddar Cheese, shredded

  • 2-3 Tbsp. Mayonnaise

  • 1-2 Tbsp. Valentina’s Hot Sauce

  • Cooking Spray

Directions

  • Combine the eggs in a medium bowl and whisk well. Spray a medium pan with cooking spray and heat up. Gently pour 1/2 of the eggs in and season with salt & pepper.

  • Allow the bottom to cook and then begin folding the edges in to form a square approximately the same size as the slices of bread.

  • Flip and allow the other side to cook evenly. Repeat for the second half of the egg mixture.

  • While the eggs are cooking, lightly toast the 4 pieces of bread. Lather with mayonnaise after toasting.

  • Plug in your panini press, lightly spray the bottom with cooking spray and lay 2 slices of bread on top, with the mayo side up. Sprinkle the cheese on top of those 2 slices and then lay each set of eggs on top of the cheese.

  • Sprinkle more cheese on top of the egg then drizzle with valentina’s hot sauce.

  • Add the second slice of bread, with the mayo side down.

  • Allow to cook in the panini press until grill lines are formed and the cheese is melted. Cut in 1/2 and serve.
