Greek Meatballs with Lemon Orzo
This has to be one of the top 5 recipes I was incredibly excited about creating! I love Greek food and the Mr. loves Orzo so to be able to easily capture them together in one recipe was awesome! So incredibly easy also … as most of our recipes are!
Greek Meatball Ingredients
1 Package Ground Chicken or Turkey
3/4 Cup Garlic Bread Crumbs
1/2 Cup Feta, crumbled
1/2 Cup Red Onion, chopped
1 Egg
2 Tbsp. Olive Oil
1-2 Tsp. Garlic Powder
1-2 Tsp. Salt
1-2 Tsp. Pepper
Orzo Ingredients
2 Cups Veggie Broth
1 Cup Orzo
1/2 Cucumber, chopped
1/4 Red Onion, sliced
2 Roma Tomatoes, chopped
2-3 Tsp. Lemon Juice
2 Tsp. Olive Oil
1-2 Tsp. Salt
1-2 Tsp. Garlic Powder
1-2 Tsp. Pepper
Directions
Combine all meatball ingredients together in a bowl (except the oil), mix well and then form into 1.5 inch meatballs. Heat the oil in large pan over medium heat. Lay the meatballs in a single layer, add a little water and cover with a lid.
Allow to cook about 4-5 minutes per side, flipping periodically or until the internal temperature is at least 165F degrees. Reduce heat and keep warm.
In a separate large pan, heat the orzo oil and add in the onions. Sauté the onions about 4-5 minutes then add in the orzo and coat well in the oil. Add in the veggie broth and lemon juice, bring to a boil then reduce to a simmer. Season with salt, garlic powder and pepper as desired also.
Simmer the orzo about 10 minutes or until it is soft. Add in the tomatoes, cucumber and mix well. Remove from heat. Plate with the meatballs and tzatziki as well as fresh squeezed lemon.
