GF Vegan Stuffing
Special holidays like Easter, Thanksgiving and Christmas can be difficult for our vegan or gluten free friends. These holidays weren’t easily designed for those friends unfortunately. Luckily this stuffing recipe that is both vegan AND gluten free tastes AMAZING and supports those friends! We suggest you give it a whirl at your next holiday dinner! If you are hosting a large group you may want to double the recipe.
Ingredients
6-8 Cups Gluten-Free Bread Cubes
2-3 Cups Vegetable Broth
1/2 Red Onion (or 1 Cup), diced
2-3 Celery Stalks (or 1 Cup), diced
1 Cup Carrots, diced
1/3-1/2 Cup Vegan Margarine
2 Tbsp. Fresh Parsley, chopped
1 Tbsp. Thyme & Rosemary mixed
2 Tsp. Sage
1 Tsp. Garlic Powder (use fresh minced Garlic for GF)
1 Tsp. Salt
1 Tsp. Pepper
Or use 3-4 Tbsp. JamDinners Turkey Dry Rub to replace all spices/seasonings
Directions
Pre-heat oven to 350F degrees.
In a medium pan, heat margarine over medium heat then add in the onion, celery, carrots, sage & rosemary. Cook until carrots are tender, approx 10-15 minutes.
In a large bowl combine the bread cubes with the vegetable mixture and remaining spices. Pour vegetable broth over top of the cubes evenly until moist. Gently toss, DO NOT pour too much and make the bread soggy or it won’t taste great. If you do not use all the vegetable broth that is okay!
Season with salt and pepper again as desired. I also like to add a small dollop or two of margarine to the top before baking. Pour into a lightly greased baking pan and bake covered for 30-40 minutes. Stir then back uncovered for 10-15 more minutes.
