Cheesy Garlic Scalloped Sweet Potatoes
Growing up my gramma (miss you gramma!) always made sweet potatoes for Easter and Thanksgiving and I could not bring myself to eat them. I never once tried them but always had that idea as a child that they were gross, as I am sure most children did. Fast forward 20 years and here I am …. LOVING Sweet Potatoes. Whether its with brown sugar, mashed or of the fry variety. I really enjoy them. An added benefit is that the other 1/2 also really enjoys sweet potatoes. He is more a fan of the mashed with brown sugar type but he is so great at giving all my ideas a try at least. These especially are so damn tasty. How can you not like them scalloped with garlic, butter and cheese? The perfect side dish for a yummy Ham!
Ingredients
2 Medium Sweet Potatoes
2 Cups Cheddar Cheese, shredded
1/2-1 Cup Parmesan Cheese, shredded
1/2 Cup Cream
1/2 Cup Plain Cashew Milk
2 Tbsp. Margarine
1-2 Tbsp. Flour
4-6 Cloves of Garlic, minced
Salt & Pepper to taste

Directions
Pre-heat oven to 400F degrees. Peel then slice the potatoes fairly thin, about 1/2 a cm wide and lay in a glass baking pan that has been sprayed with cooking spray.
In a medium sauce pan, melt margarine and add garlic until it becomes aromatic. Approximately 3-5 minutes. Add in the flour, whisk well then add in the milk, cream and Parmesan cheese. Mix well.
Add in salt & pepper to taste.
Bring to a slight boil then turn down the heat and continue mixing well. Remove from heat, allow to cool about 5-10 minutes then add in the shredded cheddar cheese. Mix until thickened and the cheese melts.
Pour evenly over the sweet potatoes in the glass dish. Place in the oven and bake for 45-60 minutes or until the sweet potatoes are fully cooked.
Broil for 3-4 minutes to brown the top then remove from the oven.
MAKE IT EASY - Stick to a classic milk or only use half and half cream if you don’t carry cashew milk in your house.
MAKE IT EXTRA - Season with extra spices such as paprika, extra garlic and our Italian seasoning even to really add flavor and depth.
