Fruity Mother's Day Bruschetta

Who would have guessed that a sweet Bruschetta was the perfect addition to brunch .. especially a Mother’s Day brunch. A simple and sweet way to show your mom how much you love and appreciate her and look like a rockstar doing it! Your mom and your stomach will thank you! There are so many ways to get creative with a sweet bruschetta like this!

Ingredients

  • 5-6 Pieces of Potato Buttermilk Bread

  • Strawberry Cream Cheese

  • 1 Cup Frozen Strawberries/Blackberries, thawed

  • 1 Cup Frozen Peaches, thawed

  • 2 Tbsp. Sliced Almonds

  • 1 Tsp. Honey

  • 1 Tsp. Sugar

Directions

  • Pre-heat oven to 350F degrees. Bake slightly for 5-10 minutes or until lightly crispy. Remove from the oven.

  • In a medium pan, combine the strawberries/blackberries and sugar. Cook over medium heat until sugar melts and fruit softens. Remove from heat and set aside.

  • Generously spread strawberry cream cheese over all slices of bread. Top 3 slices with the berry mixture, allowing some juices to drain so they don’t make the bread soggy.

  • Top the remaining slices of bread with peaches then sprinkle the almond slices on top and drizzle honey over the peach slices.

  • Serve cold and enjoy!
