Fruity Mother's Day Bruschetta
Who would have guessed that a sweet Bruschetta was the perfect addition to brunch .. especially a Mother’s Day brunch. A simple and sweet way to show your mom how much you love and appreciate her and look like a rockstar doing it! Your mom and your stomach will thank you! There are so many ways to get creative with a sweet bruschetta like this!
Ingredients
5-6 Pieces of Potato Buttermilk Bread
Strawberry Cream Cheese
1 Cup Frozen Strawberries/Blackberries, thawed
1 Cup Frozen Peaches, thawed
2 Tbsp. Sliced Almonds
1 Tsp. Honey
1 Tsp. Sugar
Directions
Pre-heat oven to 350F degrees. Bake slightly for 5-10 minutes or until lightly crispy. Remove from the oven.
In a medium pan, combine the strawberries/blackberries and sugar. Cook over medium heat until sugar melts and fruit softens. Remove from heat and set aside.
Generously spread strawberry cream cheese over all slices of bread. Top 3 slices with the berry mixture, allowing some juices to drain so they don’t make the bread soggy.
Top the remaining slices of bread with peaches then sprinkle the almond slices on top and drizzle honey over the peach slices.
Serve cold and enjoy!
