Egg Salad Sammie

I am not going to give you a long spiel about this delicious sandwich … we know egg salad sammies are EFFIN DELICIOUS! I never truly appreciated them until I became an adult but i absolutely love them now and there is no going back!

Serving Size: 2 Sammies

Ingredients

  • 4 Pieces of White Bread

  • 1/4 Cucumber, sliced

  • 4 Hard Boiled Eggs

  • 1/2 Cup Mayonnaise

  • 1/4 Cup Celery, finely chopped

  • 1 Tsp. Mustard

  • 1 Tsp. Celery Salt

  • 1 Tsp. Garlic Powder

  • 1 Tsp. Pepper

  • 1 Tsp. Lemon Juice

  • 1/2 Tsp. Salt

Directions

  • First you want to combine all of the ingredients except the cucumber and the bread in a large bowl and mix well. Allow it to sit in the fridge for an hour or so before using.

  • Once the egg salad mixture has set, lightly toast the bread (or don’t if you feel like it). then lay the cucumbers on the bottom and top with a heavy portion of egg salad. Add the top piece of toast and gently press down. There is no need for extra mayo/dressings unless desired because the moisture from the egg salad will hold it together.

  • Voila! Repeat for the second sammie.
