Egg Salad Sammie
I am not going to give you a long spiel about this delicious sandwich … we know egg salad sammies are EFFIN DELICIOUS! I never truly appreciated them until I became an adult but i absolutely love them now and there is no going back!
Serving Size: 2 Sammies
Ingredients
4 Pieces of White Bread
1/4 Cucumber, sliced
4 Hard Boiled Eggs
1/2 Cup Mayonnaise
1/4 Cup Celery, finely chopped
1 Tsp. Mustard
1 Tsp. Celery Salt
1 Tsp. Garlic Powder
1 Tsp. Pepper
1 Tsp. Lemon Juice
1/2 Tsp. Salt
Directions
First you want to combine all of the ingredients except the cucumber and the bread in a large bowl and mix well. Allow it to sit in the fridge for an hour or so before using.
Once the egg salad mixture has set, lightly toast the bread (or don’t if you feel like it). then lay the cucumbers on the bottom and top with a heavy portion of egg salad. Add the top piece of toast and gently press down. There is no need for extra mayo/dressings unless desired because the moisture from the egg salad will hold it together.
Voila! Repeat for the second sammie.
