EASY Carrot Cake Mini Waffles

Easter is almost here again and it is one of my favorite holidays! I love all the pastel colors and it signifies the beginning of SPRING! These super easy carrot cake waffles are the perfect breakfast for Easter morning.

Serving Size: 7-9 Waffles

Ingredients

  • 2 Cups Pancake Mix

  • 1 1/3 Cup Water

  • 1/2-3/4 Cup finely shredded Carrots

  • 1 Tsp. Cinnamon

  • 1 Tsp. Nutmeg

  • Cream Cheese Icing for garnish

  • Pecans for garnish

  • Cooking Spray

Directions

  • Combine the pancake mix, water, shredded carrots, cinnamon and nutmeg in a large bowl and mix well.

  • Plug in your mini waffle iron to heat up, spray with cooking spray and scoop 4-6 Tbsp. of mix into the waffle iron, close and cook until desired texture and color is achieved. Repeat until you are out of mix.

  • Top with cream cheese icing, syrup, pecans and a little carrot garnish.
