Cucumber Sammies

I am 32 years old and up until we pulled this recipe together I had NEVER had a cucumber sandwich in my life! What the heck right?

I have seriously been missing out! This fully loaded veggie sandwich is the perfect lunch snack! It was actually the Mr who suggested it. We had a great loaf of bread in the house and so much extra veggies we figured why not. I could crush these sandwiches daily.

Ingredients

  • 4 Slices Bread (your choice!)

  • 1/2 Cucumber, sliced

  • 1 Tomato, sliced

  • 1 .5 Cups of Alfalfa Sprouts

  • 1/4 Red Onion, sliced you could even slightly pickle them a little

  • 3-4 Tbsp. Mayo

  • Salt & Pepper to taste

Directions

  • If you have a panini press we grilled the slices of bread first to get grill marks, then allowed them to cool. We set them aside. We went with a great multi-grain bread loaf … oh man it was so yummy! But it will work with any bread you choose.

  • Once they have cooled, dress mayo on the insides of all slices of toasted bread, then evenly top 2 slices of bread with tomato slices, red onion slices, then cucumber slices. Add salt & pepper.

  • Finally add the alfalfa sprouts then top each of the bottom slices with the second pieces of toasted bread.

  • Cut each of the sandiwches in 1/2 and serve with soup or salad. Perfection for a random afternoon lunch.
