Crispy Potato Salad

This will be your new potato salad go-to. Promise.

It is essentially all the same ingredients you are used to but it has crispy potatoes and bacon … hard to go wrong there if I am being honest.

Prep Time: 15 minutes

Cook Time: 35-40 minutes

Ingredients

  • 2 Cups Baby Potatoes

  • 1/2 Pack of Bacon, cooked and chopped

  • 1/2 Cup Mayo

  • 1/2 Cup Greek Yogurt

  • 1/2-3/4 Cup Celery, chopped

  • 1/2-3/4 Cup Green Onion, chopped

  • 1/2 Cup Fresh Dill, chopped

  • 2 Cloves Garlic, minced

  • 1 Tsp. JamDinners Dill Dip Seasoning

Directions

  • Pre-heat oven to 370F. Boil the potatoes until soft then drain. Spread out on a lightly greased baking sheet and press down using the butt of a glass. Bake approx. 20 minutes then broil on LO until crispy. Remove from the oven and allow to cool.

  • Once the potatoes and bacon are cooked and cooled, combine all ingredients except the potatoes in a large bowl (I always leave some green onion and fresh dill for garnish). Mix all ingredients well.

  • Add in the Potatoes and lightly mix a little more to cover the potatoes. Serve cold and enjoy alongside your fave main. If you want to add some additional flavors, 1/2 tsp of mustard never hurt!
