Creole Shrimp Cobb Salad

I am not big on the whole ‘new year new me’ mantra but there is something to be said about stuffing your face during the holidays then wanting to take a step back and get back on track with healthier eating heading into the new year. We are all for that. We agree though that healthier doesn’t have to be boring. This Creole Shrimp salad is far from boring!

Salad Ingredients

  • 6 Cups Fresh Lettuce (Romaine or Iceberg)

  • 2 Hard Boiled Eggs, sliced

  • 1 Avocado, sliced

  • 3/4 Cup Shredded Cheddar Cheese

  • 1/2 Cup Corn

  • 1/2 Cup Crumbled Bacon

  • 1/4 Cucumber, sliced

  • 2 Roma Tomatoes, sliced

  • Ranch Dressing

Creole Shrimp Ingredients

  • 10 Collosal Shrimp, deveined

  • 2 Tbsp. Margarine

  • 2 Tbsp. of JamDinners Creole Seasoning

Directions

  • Evenly split the salad ingredients into 2 different bowls (except the ranch) and set aside in the fridge. Really you can add any ingredients you want but keep the egg and bacon .. that is what brings the COBB SALAD vibes.

  • Melt margarine in a medium pan over medium heat. Add the shrimp and sprinkle 1/2 of the seasoning overtop the shrimp. Cook 2-3 minutes on that side then flip the shrimp and sprinkle remaining seasonings.

  • Continue cooking until shrimp have become pink and are fully cooked. Mix around in the pan capturing as much of the seasoning as possible. Lay 5 shrimp on each salad bowl then drizzle with desired dressing.
