Creamy Berry Mimosas

I am always down for mimosas - Weekend brunch or not, we always have the ingredients necessary for mimosas in our fridge. This Easter though I wanted to get creative with our mimosas and so these Creamy Berry mimosas were born. Not too creamy, and not to sweet, just as delicious as your classic mimosa.

Serving Size: 4-6

Ingredients:

  • 1 Bottle of Champagne

  • 1.5 Cups Frozen Berries

  • 3 Tbsp. Honey

  • 1 Cup Half & Half

  • 1/2 Cup Orange Juice

  • Fresh Strawberries for garnish (optional)

Directions:

  • Pour the frozen berries into a medium pan or wok and cook for 10-15 minutes on medium heat or until berries are soft. Add honey, mix well and allow to cook another 5 minutes. Move fruit mix to a blender and puree. Grab a very thin wired metal strainer and pour the berry mix through the strainer to remove any seeds. Add the half & half, then OJ and mix well. Allow to cool in the fridge for 1 hour.

  • Add the bottle of champagne, mix well and ready to serve.
