Classic Pasta Salad

My Aunt Susie makes my all time favorite pasta salad. It is a creamy version with lots of chunks of carrots, peas, cucumber, ham and cheese. It is TERRIBLE for you but its always such a treat when she brings it to any family gathering. It is a tedious pasta salad and like I said … so so bad for you! It feels good sometimes when craving a pasta salad to pull together a healthier version and this baby is just that!

Dressing Ingredients

  • 1/2 Cup Olive Oil

  • 1-2 Tsp. Apple Cider Vinegar

  • 1/2 Tsp. Oregano

  • 1/2 Tsp. Garlic Powder

  • 1/2 Tsp. Salt

  • 1/2 Tsp. Pepper

Pasta Salad Ingredients

  • 3-4 Cups Cooked Pasta, cooled

  • 1/2 Cup Feta or Parmesan Cheese

  • 1/2 Cucumber, sliced and cut into 1/4’s

  • 1 Cup Cherry Tomatoes, halved or quartered

  • 1/4 Red Onion, chopped

Directions

  • Combine all the dressing ingredients together in a mason jar. Secure a lid and shake vigorously. Taste test and add additional seasoning if desired.

  • Combine the cooked pasta and veggies together. Add in the dressing A LITTLE AT A TIME then mix. You will for sure have extra dressing so do not just add it in or it is going to be a very oily pasta salad. Add in the cheese last. Season with additional pepper and serve.
