Cinco de Mayo, you Guac my world!

If you have been following along on this journey then you are more than aware that I love celebrating all holidays but especially CINCO DE MAYO! I love Mexican food and margaritas and as I have said in numerous posts, any excuse to make taco recipes where the Mr. is on board is a win. He is not a huge fan but he humors me as we approach Cinco de Mayo every year. I get so excited I start planning for this months in advance.

As we are heading into our second Cinco de Mayo in a pandemic and are still unable to fully enjoy Cinco de Mayo in public. I wanted to round up my favorite Cinco de Mayo recipes from over the years that can easily be made at home! I have collected my top 7 including beverages, tacos and dips!

  1. Blood Orange Margaritas: Getting creative with margaritas is always a fun way to really get into the Cinco de Mayo spirit. These Blood Orange margaritas are the perfect blend of sweet and tart and pair perfectly with a few too many patio tacos.

  2. Jalapeno Queso Dip: Not only does this Queso dip have an amazing kick to it, it is vegan which makes you feel better about crushing a ton of it with some tortilla chips. It is so creamy and a great appy … if you can control yourself.

  3. Baked Buffalo Chicken Tacos We love shredded buffalo chicken anything and this is the perfect compromise for a spouse who isn’t big on tacos. Very easy to make and requires very few ingredients.

  4. Margarita Shrimp I listed this as #4 but it is truly #1 in our books. It is our newest recipe and our favorite from this past year. Turns out lighting shrimp and tequila on fire on the BBQ really brings out the best flavors.

  5. Beergaritas: Adding our favourite beer (Boiling Oar Kolsch) to a classic margarita … that’s a pretty damn good Cinco de Mayo drink if you ask me. It gives me all the Julio’s Bario patio vibes .. I sure do miss that place. Boiling Oar’s Kolsch is a very crushable patio beverage also .. and if you can’t get your hands on a Kolsch, a good ol’ Corona will do just fine for ya.

  6. Salsa Verde:We played around with this recipe a couple times as we practiced the Mexican Eggs Benny for Mother’s Day and I am so pleased with how it turned out. Especially since Mark didn’t just like it .. he loved it! Even with the heat and the cilantro. The flavors come together well.

  7. Grapefruit Jalapeno Margaritas: Another great margarita recipe. The grapefruit and jalapeno compliment each other so well.
