Black Bean Tacos
Veggie tacos. Veggie tacos! I am really getting into these veggie options and these black bean tacos provide all the protein and delicious-y goodness of regular tacos!
Ingredients
2-4 Small Tortillas
1/2 Large Can of Black Beans, drained
1 Cup Pico de Gallo
1 Cup Shredded Lettuce
1/2 Cup Corn
1/4 Cup Red Onion, chopped
1/4 Cup Sour Cream
1/2 Jalapeno, sliced
2 Tbsp. chopped Cilantro
1/2 Tsp. Cumin
1/2 Tsp. Cayenne Pepper
1/2 Tsp. Garlic Powder
1/2 Tsp. Red Pepper Flakes
1/2 Tsp. Salt
1/2 Tsp. Pepper
Lime Wedges for garnish
Directions
In a medium pan, combine the beans, corn, red onion and spices. Fry up a little and ensure it is mixed well. Squeeze fresh lime into the pan and continue cooking on medium heat until the beans are grilled up well.
Remove the beans from the heat and begin putting together the tacos.
Start with the lettuce, then top with the grilled beans/veggie mix, add the jalapeno slices then top with the fresh Pico de Gallo.
Garnish with the chopped cilantro and a fresh squeeze of lemon then drizzle with sour cream and serve!
