Black Bean Tacos

Veggie tacos. Veggie tacos! I am really getting into these veggie options and these black bean tacos provide all the protein and delicious-y goodness of regular tacos!

Ingredients

  • 2-4 Small Tortillas

  • 1/2 Large Can of Black Beans, drained

  • 1 Cup Pico de Gallo

  • 1 Cup Shredded Lettuce

  • 1/2 Cup Corn

  • 1/4 Cup Red Onion, chopped

  • 1/4 Cup Sour Cream

  • 1/2 Jalapeno, sliced

  • 2 Tbsp. chopped Cilantro

  • 1/2 Tsp. Cumin

  • 1/2 Tsp. Cayenne Pepper

  • 1/2 Tsp. Garlic Powder

  • 1/2 Tsp. Red Pepper Flakes

  • 1/2 Tsp. Salt

  • 1/2 Tsp. Pepper

  • Lime Wedges for garnish

Directions

  • In a medium pan, combine the beans, corn, red onion and spices. Fry up a little and ensure it is mixed well. Squeeze fresh lime into the pan and continue cooking on medium heat until the beans are grilled up well.

  • Remove the beans from the heat and begin putting together the tacos.

  • Start with the lettuce, then top with the grilled beans/veggie mix, add the jalapeno slices then top with the fresh Pico de Gallo.

  • Garnish with the chopped cilantro and a fresh squeeze of lemon then drizzle with sour cream and serve!
