Chili Lime Chicken Fajita Bowl

Look at me over here just taking advantage of times when Mark isn’t home to make Mexican food! Those days do not happen very often which is why I make sure to make anything Mexican when he isn’t home.

This Fajita bowl was super easy and full of so much flavor and the inspo for it actually came from my girlfriend Shanon who made Fajitas the other day and I was craving them soooo bad after seeing all of her photos.

The heat this dish packs to is so.damn.good. The Red Cayenne Chili Oil was the perfect addition.

Prep Time: 20 minutes

Cook Time: 20-25 minutes

Ingredients

  • 1 Chicken Breast, sliced

  • 1 Red Pepper, sliced

  • 1 Green Pepper, sliced

  • 1/2 White Onion, sliced

  • Juice of 1/2 a Lime

  • 1 Jalapeno, sliced

  • 2 Tbsp. JamDinners Taco Seasoning

  • 2-3 Tsp. Evoolution Red Cayenne Chili Infused Olive Oil

  • 2-3 Tsp. Evoolution Key Lime White Balsamic Vinegar

Directions

  • In a medium pan over medium heat, add the oil and vinegar than the slices chicken breast. Season generously with taco seasoning and cook, flipping occasionally.

  • Once the chicken is almost fully cooked, push to the side, add a little more infused olive oil and add the veggies (except the jalapeños) to the pan. Season lightly with taco seasoning as well. Continue cooking until about 7-9 minutes.

  • Serve over rice, add the fresh sliced jalapeños and squeeze fresh lime juice overtop.
