Carrot Cheesecake Blondies

Okay …. combining our love for carrot cake and cream cheese … genius!

I have no clue why on earth we wouldn’t have tried this recipe idea before but never the less … we are here and we are excited!

Carrot Cake Ingredients

  • 2.5 Cups of Brown Sugar

  • 1.5 Cup of Flour

  • 1.5 Cup of Shredded Carrots

  • 3/4 Cup Butter, melted

  • 1.5 Tbsp. Vanilla

  • 1.5 Tsp. JamDinners Cinnamon Spice

  • 1/2 Tsp. Baking Powder

  • 1/2 Tsp. Salt

Cheesecake Ingredients

  • 4oz Cream Cheese, room temperature

  • 1/4 Cup Sugar

  • 1 Egg Yolk

  • 1 Tsp. Vanilla

Directions

  • Pre-heat oven to 350F degrees. In a stand mixer combine the brown sugar and melted butter. Mix well.

  • Add in the egg and vanilla and then all the dry ingredients. Lastly add in the shredded carrots. Mix well and set aside.

  • In a separate medium bowl, combine the cheesecake ingredients and combine well using an electric hand mixer if you have one.

  • Spray an 8x8 baking pan with cooking spray then spread 1/2 of the carrot cake mixture in the pan and spread evenly. Using a spoon, scoop generous portions of the cheesecake mixture randomly on top. add in the remaining carrot cake mixture.

  • Using a spoon swirl the mixtures together.

  • Bake 35-40 minutes or until golden brown. Remove from the oven, allow to cool fully then cut and serve.
