Camping Street Corn
Mmmmm Corn on the Cob. A summer staple. Who doesn’t like corn on the cob? Well a fun way to spruce it up is to make our version of Street Corn! A perfect fire put recipe and we recommend making the dip before heading out camping, it will make it so much easier!
Ingredients
4 Cobs of Corn in husks
1/2 Cup Feta Cheese, crumbled
1/3 Cup Mayo
1/3 Cup Sour Cream
1/3 Cup Parsley, chopped
1-2 Tsp. Paprika
1 Tsp. Chili Powder
1 Tsp. Garlic Powder
1 Lime, cut into wedges
Directions
Before heading out camping, pre-make the sauce by combining the sour cream, mayo, 1/2 paprika, chili powder and garlic powder.
Lay out the 4 corn on the cobbs, on a metal grate over the top of a fire. Allow to cook 20-30 minutes.
Once the corn is cooked, de-husk and lay back out on the grate for 3-4 minutes to give some char to the corn. Remove and set aside to cool slightly.
Brush the corn generously with the cream sauce. Sprinkle the top with the remaining paprika.
Top with fresh parsley, feta cheese and squeeze the lime wedges lightly overtop. Eat hot!
