Buffalo Cauli-Bites

Who doesn’t love buffalo wings on a Wing night paired with ranch and a pint of ice cold beer? We LOVE wing night to say the least but sometimes you need a healthier option. You still want to satisfy your cravings but you know deep down eating pounds of wings every night is no good. These are a great substitute and you can feel good about eating them.

Ingredients

  • 1 Head of Cauliflower, chopped/crowned

  • 1 Cup Flour

  • 1 Cup Milk

  • 1 Cup Panko Bread Crumbs

  • 1/2 Cup Franks Red Hot Sauce

  • 2 Tsp. Garlic Powder

  • 1 Tsp. Chili Powder

  • 1 Tsp. Salt

  • 1 Tsp. Pepper

Directions

  • Pre-heat over to 450F degrees and line a baking pan with parchment paper. Combine flour, milk, garlic powder, chili powder, salt and pepper in a bowl and mix well.

  • Once cauliflower has been rinsed, dried and chopped into bite size pieces dip pieces one at a time in the flour mixture allowing excess mixture to drip off. Then dip into the panko crumbs and ensure the cauliflower is evenly covered. Place coated piece onto the baking pan and repeat for all other pieces.

  • Bake for 30 minutes then remove from oven. Transfer cauli-bites into a medium sized bowl and add the hot sauce then toss around until all bites are fully covered by hot sauce. Feel free to use more or less sauce depending on desired spicy-ness.

  • Dump the cauli-bites back on the pan and back for 10 more minutes. IF you desire additional cripsy-ness, broil after for another 2 minutes then remove from the oven. Serve with your favorite ranch or blue cheese dressing and fresh vegetables.
