Broccoli Cheddar Baked Mashed Potatoes
Potatoes are top of the list for favorite meals that the Mark enjoys. I love potatoes too but it is actually a carb that I think .. ‘I could take them or leave them’ you know? So when we do make potatoes, I like to get creative. You have seen our Seafood Stuffed Potatoes right? Broccoli/Cheddar Potatoes isn’t a ground breaking recipe but it sure is good.
Ingredients
3 Large Russet Potatoes, peeled and chopped into 1-2 inch pieces
1-2 Cups Broccoli Florets
2 Cups Cheddar Cheese
1/2 Cup Milk (or Cream)
1/4 Cup Cream Cheese
3-4 Tbsp. Sour Cream
2-3 Tbsp. Margarine
1 Tsp. Salt
1 Tsp. Pepper
1-2 Tsp. Garlic Powder
Directions
Pre-heat oven to 350F degrees. Boil potatoes in a large pot until soft then remove from burner and drain water. Mash the potatoes until all lumps are gone.
Add in the cream cheese, sour cream and milk. Continue to mash. Add in the margarine and spices. Mash until combined.
Add in 1 cup of the cheddar cheese and mix well then add the broccoli florets last. Add additional seasonings until desired taste is achieved.
Lightly grease a round baking pan with cooking spray or margarine. Scoop the potatoes mixture into the pan and level. Add remaining cheese to the top.
Bake 20-25 minutes or until top begins to brown. Broil on LO for 4-5 minutes to crisp up the top. Remove from the oven and serve hot.
