Broccoli Cheddar Baked Mashed Potatoes

Potatoes are top of the list for favorite meals that the Mark enjoys. I love potatoes too but it is actually a carb that I think .. ‘I could take them or leave them’ you know? So when we do make potatoes, I like to get creative. You have seen our Seafood Stuffed Potatoes right? Broccoli/Cheddar Potatoes isn’t a ground breaking recipe but it sure is good.

Ingredients

  • 3 Large Russet Potatoes, peeled and chopped into 1-2 inch pieces

  • 1-2 Cups Broccoli Florets

  • 2 Cups Cheddar Cheese

  • 1/2 Cup Milk (or Cream)

  • 1/4 Cup Cream Cheese

  • 3-4 Tbsp. Sour Cream

  • 2-3 Tbsp. Margarine

  • 1 Tsp. Salt

  • 1 Tsp. Pepper

  • 1-2 Tsp. Garlic Powder

Directions

  • Pre-heat oven to 350F degrees. Boil potatoes in a large pot until soft then remove from burner and drain water. Mash the potatoes until all lumps are gone.

  • Add in the cream cheese, sour cream and milk. Continue to mash. Add in the margarine and spices. Mash until combined.

  • Add in 1 cup of the cheddar cheese and mix well then add the broccoli florets last. Add additional seasonings until desired taste is achieved.

  • Lightly grease a round baking pan with cooking spray or margarine. Scoop the potatoes mixture into the pan and level. Add remaining cheese to the top.

  • Bake 20-25 minutes or until top begins to brown. Broil on LO for 4-5 minutes to crisp up the top. Remove from the oven and serve hot.
