BLT Salad w/ Jalapeno Ranch Dressing
One of my favorite things about salads is how easy they can be but also how creative you can get with them. I could basically eat salad every night as long as it wasn’t the same salad every. single. night. So many toppings and dressing options, who could get bored? One of my favorite salads is the Cobb Salad at the Canadian Brewhouse and substitute the normal dressing with their Jalapeno Ranch dressing. Simply the best. Unfortunately it isn’t logical to order that salad on a regular basis, so what did I do? Well I played with a bunch of ingredients and made my OWN Jalapeno Ranch to enjoy at home!
Serving Size: 2 Entree Salads
Dressing Ingredients
1 Jalapeno
1/2 Cup Non-Fat Plain Greek Yogurt
1 Tsp. Dried Dill
1 Tsp. Dried Parsley
1/2 Tsp Garlic Powder
1/2 Tsp. Onion Powder
1/2 Tsp Salt
Salad Ingredients
2 Chicken Breast (or Steaks), cooked and sliced
1 Medium heads of Romaine Lettuce, washed and chopped
1/2 Lb. Bacon, cooked and chopped
2 Hard Boiled Eggs
1/4 Red Onion, Chopped
1 Avocado, sliced
1/2 Tomato, chopped
Directions
Combine all salad dressing ingredients into a blender or Nutribullet type piece of kitchen appliance. Blend well and set aside.
Combine all salad ingredients in a bowl and top with desired amount of dressing. Add shredded or feta cheese for some extra flavor.
