Basil Pesto Shrimp Pasta

We got through phases where we crush different flavors. Cajun for example. Well, we also go through a PESTO phase at least once a year where we make tons of recipes with basil pesto. This Shrimp pasta is a staple in our house during ‘pesto season’ and it is so simple to make! Such a fresh take on a pasta dish. Especially when pasta is such a common winter dish, it is nice to switch it up every once in awhile.

Ingredients

  • 6-10 Colossal Shrimp

  • 1 Handful of Spaghetti Noodles, cooked as per packaging

  • 1/2 Cup Parmesan Cheese

  • 4-5 Tbsp. Basil Pesto

  • 4-5 Cloves of Garlic, minced

  • 1-2 Tbsp. of Margarine

  • 1-2 Tsp. Salt

  • 1-2 Tsp. Pepper

Directions

  • Once the spaghetti noodles are cooked, drain and set aside. Cut the shrimp into halves to allow for shrimp better spread throughout the entire dish.

  • Melt the margarine in a large skillet over medium heat then add in the shrimp and garlic. Season with salt and pepper.

  • Once the shrimp is almost cooked, add in the cooked noodles and the basil pesto. Mix really well.

  • Add additional salt and pepper if desired.

  • Sprinkle with parmesan cheese and partially melt. Serve up. Sprinkle with additional cheese if desired.
