Baked Buffalo Ranch Cauliflower Tacos

We are by no means vegetarians in this house (in fact I have told you all before the Mr. is very much a meatatrian) BUT we are trying to be more aware of what we are eating and choosing vegetarian options on occasion to balance it out. Any vegans reading this will HATE US still, and that’s okay but I am being real! We know we can and should be doing more but we are taking steps in the right direction. Anyways - these tacos were friggen amazing! I could not get over how amazing they tasted and we will definitely be making an effort to include this recipe and others similar into our diet more often!

Serving Size: 2 Tacos

Ingredients

  • 1/2 Head Cauliflower, cut into bite sized florets

  • 1/2 Cup Franks Red Hot Sauce

  • 3/4 - 1 Cup Ranch Dressing

  • 1/2 Head Cabbage, chopped

  • 1/2 Cup Red Onion

  • 1/2 Cup Mushrooms (optional)

  • 1 Jalapeno, sliced

  • 2 Tsp. Lime Juice

  • 1-2 Tsp. JamDinners Buffalo Wing Dry Rub

  • 2 Small Tortillas

  • 1/2 Avocado, sliced (optional)

  • Salt, Pepper and Garlic Powder to taste

Directions

  • Preheat oven to 350F degrees. In a medium bowl combine 1/2 the hot sauce, 1/2 the ranch and all of the cauliflower. Mix well, ensuring all the cauliflower gets coated with the sauce.

  • In a small lightly greased baking dish pour the cauli mixture in and bake for approx 10 minutes or until the cauliflower starts to soften. Remove from the oven and set aside. I like extra HOT so I add even more hot sauce at this point.

  • While the cauliflower is cooking heat up a medium frying pan with a little cooking spray add the cabbage, red onion and mushrooms to sautee. Sprinkle with desired amount of salt, pepper and garlic powder. Add a little ranch/hot sauce mixture in this cooking process. After sauteeing, remove from heat and set aside.

  • Lay out tortillas on a new baking pan top with cabbage/veggie mix then top with cooked cauliflower. Add jalapenos and more fresh red onion (Add shredded cheese as well if desired). Bake for 7-10 minutes or until tortillas just start to brown.

  • Remove from the oven and drizzle remaining buffalo ranch sauce. Squeeze fresh lime juice on top and add avocado even then enjoy!
