Ain't Your Typical Twice Baked Potato

I say these aren’t typical because they are actually only baked once … instead of baking them a second time we throw them on the BBQ and finish them there. SO easy and so delicious!

Ingredients

  • 3 Large Russet potatoes, washed

  • 1 Cup Shredded Cheddar Cheese

  • 1/4 Cup Sour Cream

  • 1/4 Cup Cream Cheese

  • 1/4 Cup Buttermilk

  • 2 Tbsp. Unsalted Butter, softened

  • Bacon, cooked and divided (Optional)

  • Green Onion as desired, chopped (Optional)

  • 1 Tsp. Black Pepper

  • 1 Tsp. Garlic Powder

  • 1 Tsp. Salt

Directions

  • Pre-heat oven to 400F degrees. Place the whole potatoes on the middle rack and cook about 45 minutes to 1 hour. Remove from the oven and let cool slightly. You have to let them cool long enough for you to handle them without burning yourself.

  • Heat BBQ to appropriate heat, approx 500F.

  • Cut each potato length wise and scoop out the insides leaving the skin fully in tact. Scoop the insides into a medium sized bowl. Add the spices, cheese, sour cream, cream cheese, buttermilk and butter then mash the potato mixture well. Leave about 1/3 cup of cheese out to sprinkle on top after.

  • Fill the potato shells with the mixture then top with the remaining cheese, bacon and green onion. Place in a non-stick pan or directly on the top rack of the BBQ. Allow to sit in there for 10 minutes. Remove and enjoy!
