Veggie Nachos

Craving a healthy version of nachos then this recipe should be your go-to. Not only did we use mini bell peppers instead of nacho chips, we used plant-based meat instead also. So delicious and you can feel good about crushing nachos on football Sunday!

Ingredients

  • 6-10 Mini Bell Peppers

  • 1 Package Lightlife Veggie Sausage

  • 1 Cup Shredded Cheddar Cheese

  • 1/2 Red Onion, chopped

  • 1 Roma Tomato, chopped

  • 1 Jalapeno, sliced

  • 1/2 Cup Salsa

  • 1 Tbsp. Oil

  • 1 Tsp. Pepper

  • 1 Tsp. Salt

  • 1 Tsp. Garlic Powder

Directions

  • Pre-heat oven to 350F degrees. Chop the mini bell peppers in 1/2 and lay out on a baking sheet.

  • Heat the oil in a medium sauce pan and add the veggies sausage then season with salt, pepper and garlic powder.

  • Continue cooking over medium heat for about 6-7 minutes then add the salsa and mix well.

  • Top the mini bell peppers evenly with the cooked meat then add the onions, tomato and jalapeno. Finally, add the cheese.

  • Bake until cheese is fully melted. Approx. 8-10 minutes. Serve with salsa and fresh guac.
