Veggie Nachos
Craving a healthy version of nachos then this recipe should be your go-to. Not only did we use mini bell peppers instead of nacho chips, we used plant-based meat instead also. So delicious and you can feel good about crushing nachos on football Sunday!
Ingredients
6-10 Mini Bell Peppers
1 Package Lightlife Veggie Sausage
1 Cup Shredded Cheddar Cheese
1/2 Red Onion, chopped
1 Roma Tomato, chopped
1 Jalapeno, sliced
1/2 Cup Salsa
1 Tbsp. Oil
1 Tsp. Pepper
1 Tsp. Salt
1 Tsp. Garlic Powder
Directions
Pre-heat oven to 350F degrees. Chop the mini bell peppers in 1/2 and lay out on a baking sheet.
Heat the oil in a medium sauce pan and add the veggies sausage then season with salt, pepper and garlic powder.
Continue cooking over medium heat for about 6-7 minutes then add the salsa and mix well.
Top the mini bell peppers evenly with the cooked meat then add the onions, tomato and jalapeno. Finally, add the cheese.
Bake until cheese is fully melted. Approx. 8-10 minutes. Serve with salsa and fresh guac.
