Taco Baked Potato

Having fun with one of my fave meals and one of Marks …. tacos and cheesy baked potatoes. Let’s get into it.

Cook Time: 45 minutes

Serving Size: 2 Baked Potatoes

  • Using a fork, poke 4-5 sets of holes per potato and microwave for 6 minutes. Flip the potatoes and microwave another 3 minutes. Remove,set aside and allow to cool enough to handle.

  • once the potato has cooled enough, cut through the skin around the top and scoop out as much potato as you can without damaging the skin around the rest of the potato. Add that potato mixture to a large bowl and add in the sour cream, cheddar cheese and the additional taco seasoning, mix well.

  • Pre-heat oven to 350F. Scoop the potato mixture back into the potatoe skins with a little overflow on the top. Return to the oven, bake for approx 10-15 minutes then broil on low to add some color to the top of the potatoes.

  • Remove from the oven and top with ground beef, a little more cheese and fresh veggies. Drizzle with sour cream and guacamole if desired and serve with salsa.
