Serrano Pepper Crema Brussel Sprouts
Raise your hand if you were one of those kids that grew up hating Brussel Sprouts? I was also one of those kids - I thought they were so gross! Fast forward a couple years to when I am 30 …. and now i LOVE them. This recipe imp-articular is my favorite. It is so full of flavor with a little heat. These are a crowd favorite at Christmas time in our family and incredibly easy to make. It was a no brainer to include these in the ‘12 Days of Recipes’.
Ingredients
20-30 Medium Sized Brussel sprouts, rinsed and cut in halves length wise
1-2 Serrano Peppers, sliced (or 1 jalapeno)
1/2 Cup Mayonaise
1/2 Cup Greek Yogurt
4 Garlic Cloves, minced
3 Tbsp. Vegetable Oil (or Evoolution Garlic & Jalapeno Infused Oil)
1 Tsp. Salt
1 Tsp. Pepper
Directions
Using a nutribullet or blender, combine the mayo, greek yogurt, peppers, salt and pepper. Blend until fully pureed. Keep refrigerated until needed.
In a frying pan, heat the vegetable over medium heat. Once heated lay the brussel sprouts in and sprinkle with a little salt/pepper add a couple tablespoons of water to help the cooking process. Cover pan with lid to keep heat in and pan fry 10-15 minutes or until brussel sprouts are almost fully cooked. Turn sprouts periodically to ensure all sides are cooked evenly.
Remove lid and finish the brussel sprouts by frying them until they are gold brown! Drizzle with serrano pepper crema and serve.
