Roast Beef Eggs Benny
Continuing on with Eggs Benny recipes for my mama has lead me to these super simple Roast Beef Eggs Bennies! Anyone that knows my mom, knows she is a huge fan of Horseradish .. for as long as I can remember. She would crush it with her steak or roast beef growing up and sit at the table sniffling because of the heat but she would refuse to stop because the flavor was always just too good .. and I definitely inherited that from her because I now find myself doing the same thing LOL. Anyways so it seemed perfect to find an easy way to incorporate horseradish into the eggs benny.
Serving Size: 2 people
Ingredients
2 English Muffins, toasted
1 Package or slices roast beef
4 Eggs, poached (using the easy oven method)
1/2 Package of Hollandaise Sauce, prepared as per packaging
1/4 Cup Green Onion or Chives, chopped
1-2 Tsp. Horseradish Sauce
1 Tsp. Paprika
Directions
Pre-heat oven to 350F degrees. Using a 6-cup muffin tin, spray 4 of them with cooking spray then spoon 1 tbsp. of water into the bottom of all 6. Crack a single egg into 4 of the 6 cups (you still want water in the others so they don’t burn). Bake for 10-12 minutes.
While the eggs are cooking, toast the English muffins and start the hollandaise sauce. Prepare the hollandaise sauce in a small pot on the stove as per the packaging instructions.
Once the hollandaise sauce is ready, add in the horseradish, mix well and season with a little pepper.
Lay out the toasted English muffins, top each side with even amounts of roast beef then scoop out the eggs and lay one on top of each, drizzle with horseradish then sprinkle with the green onion and paprika.
