Rainbow Veggie Kebobs
Woohoo baby … Week 3 of our PRIDE themed recipes calls for Veggie Kebobs! Perfect for summer, easy to whip up and super healthy!
Serving Size: 3-4 Kebobs
Ingredients
1/2 Red Pepper, cut into 1.5 inch portions
1/2 Yellow Pepper, cut into 1.5 inch portions
1/2 Orange Pepper, cut into 1.5 inch portions
1 Zucchini, sliced
5-8 Mushrooms
1/2 Red Onion, chopped into 1.5 inch portions
5-8 Cherry Tomatoes
2-3 Tsp. Evoolution Garlic Infused Oil
1-2 Tsp. Salt
1-2 Tsp. Pepper
1 Tsp. Garlic Pepper
Directions
Combine all chopped veggies in a large bowl, add in the oil, salt, pepper & garlic powder.
Skewer the veggies in a rainbow flow then BBQ over medium heat, rotating often. Ensure they are fully cooked then serve as a side dish for any meal!
