Rainbow Veggie Kebobs

Woohoo baby … Week 3 of our PRIDE themed recipes calls for Veggie Kebobs! Perfect for summer, easy to whip up and super healthy!

Serving Size: 3-4 Kebobs

Ingredients

  • 1/2 Red Pepper, cut into 1.5 inch portions

  • 1/2 Yellow Pepper, cut into 1.5 inch portions

  • 1/2 Orange Pepper, cut into 1.5 inch portions

  • 1 Zucchini, sliced

  • 5-8 Mushrooms

  • 1/2 Red Onion, chopped into 1.5 inch portions

  • 5-8 Cherry Tomatoes

  • 2-3 Tsp. Evoolution Garlic Infused Oil

  • 1-2 Tsp. Salt

  • 1-2 Tsp. Pepper

  • 1 Tsp. Garlic Pepper

Directions

  • Combine all chopped veggies in a large bowl, add in the oil, salt, pepper & garlic powder.

  • Skewer the veggies in a rainbow flow then BBQ over medium heat, rotating often. Ensure they are fully cooked then serve as a side dish for any meal!
