Papa PP's Potatoes

Papa PP is my dads nickname and these are my dad’s potatoes and they are amazing. They are so simple but they are one of my favorite recipes from growing up. You can season them up and brown them up as much or as little as you want. They are the perfect side dish for BBQ season! The only thing I have changed is the addition of some onion - my poor dad could never add them when we were kids because we were some picky brats!

Serving Size: 3-4

Ingredients

  • 3 Russet Potatoes (or go with 5-7 White Potatoes)

  • 3 Tbsp. Butter or Margarine

  • Garlic Powder to taste

  • 1/2 White Onion, chopped

  • Seasoning Salt to taste

  • Green Onion (for garnish)

Directions

  • Heat your BBQ up to about 450F-500F. Wash and peel the potatoes and cut into 1 inch pieces. Spread 1.5 tbsp. of butter onto a large sheet of tinfoil. A big enough piece to almost single layer all of the potato pieces. Place the potatoes on the tinfoil and sprinkle on chopped white onions then season with garlic powder and seasoning salt. Top with green onion for garnish also if you would like. Grab another piece of tinfoil and butter wand tightly wrap the potatoes.

  • BBQ for 45 minutes to 1 hour or until potatoes are fully cooked. Flipping the pack of potatoes 1/2 way through the cooking process. Let potatoes cook a little longer if you want crispy.

  • Top with sour cream, cheese or bacon bits after plating.
