Mexi Veggie Wraps

Hahahahahaha I legit evil laughed when I put this on the meal plan for the week because I know how little the Mr dislikes Mexican food! But I love it and I needed another idea for #meatlessmonday so haha to him! He ate all of it BTW too because it was so damn good!

Serving Size: 4 Wraps

Ingredients

  • 4 Large Tortillas

  • 2-3 Cups of Shredded Lettuce (Romaine or Iceberg)

  • 2/3 Cup Cheddar Cheese, shredded

  • 2/3 Cup Corn

  • 2/3 Cup Black Beans

  • 2/3 Cup Refried Beans

  • 1 Hot House Tomato, chopped

  • 1 Avocado, sliced

  • 1/4 Red Onion, sliced

  • 3-5 Tbsp. Salsa Ranch Dressing

  • 2-4 Tbsp. Pickled Green Chilis

  • Sour Cream & Salsa if desired

Directions

  • Lay out the tortillas and starting with spreading the refriend beans out in the middle of all 4 wraps evenly. Next add the veggie toppings and add the cheese/salsa ranch last .. again, evenly between all of the wraps!

  • Fold in the edges and roll tightly. Easy peasy for a nice lunch or protein packed dinner. Serve with taco salad for a real fiesta!
