Margarita Shrimp
WARNING: Use of open flames and a hand torch!
This recipe is not just for Cinco de Mayo … this recipe is everything you want in a summer meal: Shrimp, amazing flavor, and flaming tequila! Perfect for hot summer nights and entertaining friends/family!
Ingredients
18-24 Large Shrimp, peeled and deveined
1/2 Cup Cilantro, chopped
1/2 Jalapeno, finely chopped
2-3oz. Tequila
2 Limes, sliced for squeezing
3-4 Tbsp. Butter
2 Tsp. Cumin
2 Tsp. Paprika
2 Tsp. Garlic Powder
2 Tsp. Onion Powder
2 Tsp. Cayenne Powder
2 Tsp. Pepper
1-2 Tsp. Salt
Directions
Combine all the spices in a small bowl and mix well.
Lay out the shrimp on a flat surface, damp dry both sides with paper towel. Evenly season both sides of all shrimp with the spices and set aside.
Using a cast iron skillet on the BBQ, heat it up and then once desired heat is achieved, add in the butter. As the butter begins to melt, lay the shrimp in a single layer. Cook about 3-4 minutes then flip.
After flipping add in the finely shopped cilantro and jalapenos and mix around. Cook another 3-4 minutes. Pour in the tequila and then using a hand torch, apply flame to the tequila SAFELY for a few seconds then turn off the torch and allow the shrimp to cook briefly in the flame as it dies down.
Squeeze in a couple halves of lime juice, mix around and then plate!
Serve with mexi rice and fresh Pico de Gallo
