Guac Stuffed Bacon Wrapped Chicken Breast
Ohhhh yaaaaa … Chicken .. check, guacamole .. check, bacon ... check! This recipe is BOMB! So tasty and i personally feel like the guacamole balances out the bacon … I am probably wrong but I don’t care. This is a great recipe for a chilly Spring or Fall evening. A great way to switch up the classic Chicken Breast recipe.
Ingredients
2 Chicken Breast
6 Pieces of Bacon
4-6 Tbsp. Guacamole
1 Tsp. Garlic Powder
1 Tsp. Pepper
Directions
Pre-heat oven to 425F degrees. Pat dry the chicken breast and using a mallet, flatten out the chicken.
Once you have reached desired ‘flatness’ scoop the guacamole out into the center of each chicken breast, Fold tightly over.
Wrap in strips of uncooked bacon, and use toothpicks to secure to the chicken. ALWAYS count the # of toothpicks you use in each so you aren’t guessing or searching later. Trust me lol, the Mr and I learned that long ago!
Lay the wrapped chicken breast out on a baking sheet and sprinkle with garlic powder & pepper. Bake for 25-35 minutes or until chicken and bacon are fully cooked.
Remove from oven and serve.
