Guac Stuffed Bacon Wrapped Chicken Breast

Ohhhh yaaaaa … Chicken .. check, guacamole .. check, bacon ... check! This recipe is BOMB! So tasty and i personally feel like the guacamole balances out the bacon … I am probably wrong but I don’t care. This is a great recipe for a chilly Spring or Fall evening. A great way to switch up the classic Chicken Breast recipe.

Ingredients

  • 2 Chicken Breast

  • 6 Pieces of Bacon

  • 4-6 Tbsp. Guacamole

  • 1 Tsp. Garlic Powder

  • 1 Tsp. Pepper

Directions

  • Pre-heat oven to 425F degrees. Pat dry the chicken breast and using a mallet, flatten out the chicken.

  • Once you have reached desired ‘flatness’ scoop the guacamole out into the center of each chicken breast, Fold tightly over.

  • Wrap in strips of uncooked bacon, and use toothpicks to secure to the chicken. ALWAYS count the # of toothpicks you use in each so you aren’t guessing or searching later. Trust me lol, the Mr and I learned that long ago!

  • Lay the wrapped chicken breast out on a baking sheet and sprinkle with garlic powder & pepper. Bake for 25-35 minutes or until chicken and bacon are fully cooked.

  • Remove from oven and serve.
