Green Pancakes

St. Patty’s Day is right around the corner and what better way to enjoy a fun treat with your kids then these SUPER easy Green Pancakes. We show a pancake mix from scratch but by all meals use boxed pancake mix .. we don’t judge over here! Side note, we bought Lucky Charms for this recipe and I have to say that is the first time I have bought Lucky Charms in at least 10 years!

Ingredients

  • 1.5 Cups Flour

  • 1.25 Cups Milk

  • 1 Egg

  • 3 Tbsp. Melted Butter

  • 1 Tbsp. Sugar

  • 3 Tsp. Baking Powder

  • 1 Tsp. Salt

  • 3-4 Tsp. Green Food Coloring

  • Whip Cream

  • 1 Cup Lucky Charm Marshmallows

  • Cooking Spray

Directions

  • Combine flour, salt, baking powder and sugar in a large bowl then make a whole in the middle of the mix. In a separate bowl mix the egg, milk and melted butter. Pour the wet mixture into the hole in the dry mixture then whisk together.

  • Add in the green food coloring and whisk a little more.

  • Spray a heated pan with cooking spray then scoop the mixture into the hot pan, scoop as much or as little as you like to make the pancakes whichever size you want.

  • Cook on one side until the top starts to lightly bubble then flip (ensuring the bottom is lightly browned). Repeat for each size and each pancake. Remove from heat and set aside in a warm oven.

  • Once ready to serve, add the whip cream the sprinkle with the Lucky Charm marshmallows.
