Greek Chicken Bowl w/ Pita Chips

Everything about this meal is delicious. Everything from the marinated Greek chicken to the homemade Pita Chips to the Homemade Tzatziki (you can find that recipe in Dips & Sauces). It is truly a delicious meal and very filling, worth it to give it a shot!

Serving Size: 3

Chicken Marinade Ingredients

  • 3 Chicken Breast

  • 3/4 Cup Non-Fat Greek Yogurt

  • 1/3 Cup Olive Oil

  • 1/3 Cup Lemon Juice

  • 1 1/2 Tsp. Garlic Powder

  • 1 1/2 Tsp Oregano

  • 1/2 Tsp. Salt

  • 1/2 Tsp. Pepper

  • 1/2 Tsp. Red Pepper Flakes

Marinade Directions

  • Combine all marinade ingredients in a glass tupperware container or ziploc bag and mix well. Add chicken and seal Marinade for at least 2 hours, ideally overnight.

Pita Chip Ingredients

  • 3 Full Sized Pitas

  • 1/3 Cup Olive Oil

  • 1 Tsp. Oregano

  • 1 Tsp. Garlic Powder

  • 1/2 Tsp. Salt

  • 1/2 Tsp. Pepper

Pita Chip Directions

  • Pre-heat oven to 350F. Cut Pitas into triangles of equal sizes. Combine all other ingredients in a small bowl. Brush the mixture on each pita triangle. Bake for 10 minutes or until just crispy.

Salad Ingredients

  • 1 Head of Iceberg Lettuce, chopped

  • 1 Cucumber, sliced

  • 1/2 Redo Onion, chopped

  • Handful of Cherry/Grape Tomatoes, halved

  • 1/2 Cup Feta Cheese

  • 1 Cup Tzatziki Sauce

Directions

  • Pre-heat the BBQ to cook the chicken. Combined all vegetables in a bowl. Remove chicken from marinade container and cook chicken fully then place on top of vegetables. Top with feta cheese and tzatziki sauce.
