Fully Loaded Smashed Potatoes
An easy side dish or snack with all the delicious-ness of a loaded baked potato.

Ingredients
1 Bag of Baby Potatoes
1/2 Pack Bacon (we used Lilydale Turkey Bacon), cooked and crumbled
1/2-3/4 Cup Cheddar Cheese, shredded
1/2 Cup Sour Cream
Garlic + S&P to taste
Green Onion for garnish
Directions
Boil the potatoes in a large pot until soft.
Remove from the pot and spread out on slightly greased baking sheet. Using the butt end of a glass, smash each potato.
After smashing the potatoes, season with desired salt, pepper and garlic powder. We used Ghostly Garlic Salt and pepper. You can add the cheese at this point to crisp up as well when you broil or you can save it and add it after.
Broil on LO for about 15 minutes or until golden brown.
Remove from the oven, top with cheese if you didn’t already add it, a small dollop of sour cream on each, bacon and green onion. Voila.
