Deluxe Mashed Potatoes
No bells and whistles over here … just our mashed potato game, stepped up a couple levels!
Ingredients
4 Russet Potatoes, peeled and cut into 2in cubes
1.5 Cups Cheddar Cheese
1/2 Cup Heavy Cream
1/2 Cup Chives, chopped
2-4 Tbsp. Butter
1-2 Tbsp. Spicy Calabrian Pesto EVOO Oil
2 Tsp. Garlic Powder
1-2 Tsp. Salt
1-2 Tsp. Pepper
Directions
Add cut potatoes to a large pot 3/4 full with water. Sprinkle a little salt and cook over high heat until potatoes are soft.
Drain potatoes then add in the salt, pepper, garlic powder, cream and margarine. Mash well.
Add in 3/4 cup of cheddar cheese and combine well.
Add additional seasonings or more milk/cream as needed to achieve desired taste and texture.
Scoop mashed potatoes into a casserole dish and spread evenly. Add remaining cheddar cheese on top and spread evenly also.
Broil on LO until lightly browned. Remove from the oven, sprinkle with chopped chives then drizzle with Calabrian Oil. Enjoy!
