Deluxe Mashed Potatoes

No bells and whistles over here … just our mashed potato game, stepped up a couple levels!

Ingredients

  • 4 Russet Potatoes, peeled and cut into 2in cubes

  • 1.5 Cups Cheddar Cheese

  • 1/2 Cup Heavy Cream

  • 1/2 Cup Chives, chopped

  • 2-4 Tbsp. Butter

  • 1-2 Tbsp. Spicy Calabrian Pesto EVOO Oil

  • 2 Tsp. Garlic Powder

  • 1-2 Tsp. Salt

  • 1-2 Tsp. Pepper

Directions

  • Add cut potatoes to a large pot 3/4 full with water. Sprinkle a little salt and cook over high heat until potatoes are soft.

  • Drain potatoes then add in the salt, pepper, garlic powder, cream and margarine. Mash well.

  • Add in 3/4 cup of cheddar cheese and combine well.

  • Add additional seasonings or more milk/cream as needed to achieve desired taste and texture.

  • Scoop mashed potatoes into a casserole dish and spread evenly. Add remaining cheddar cheese on top and spread evenly also.

  • Broil on LO until lightly browned. Remove from the oven, sprinkle with chopped chives then drizzle with Calabrian Oil. Enjoy!
