Classic Potato Salad

It is funny how we are two years into this blog and we have shared a few different Potato Salads but we are just finally getting around to share our classic Potato Salad. Simple and delicious. A crowd favorite at backyard BBQ’s. Give it a whirl!

Dressing Ingredients

  • 1/2 Cup Mayo

  • 1/2 Cup Sour Cream

  • 1 Tbsp. Dijon Mustard

  • 1 Tbsp. White Vinegar

  • 1 Tsp. Salt

  • 1 Tsp. Pepper

  • 1 Tsp. Dried Dill

  • 1/2 Tsp. Garlic Powder

  • 1/2 Tsp. Onion Powder

  • 1/2 Tsp. Paprika

Salad Ingredients

  • 3lbs. White Potatoes, cubed and boiled until soft

  • 4 Hard Boiled Eggs, chopped

  • 1 Cup Celery, chopped

  • 1/2 Cup Green Onions, chopped

  • Paprika for garnish

Directions

  • Once you have boiled the potato cubes until soft, drain the pot and transfer the potatoes to a large bowl. Allow potatoes to full cool in the fridge before doing anything else.

  • While the potatoes are cooling, combine all dressing ingredients and allow to sit in the fridge also.

  • Once the potatoes are cooled add in the chopped celery, hard boiled eggs and half of the green onion. Slightly mix then add in the dressing, I add in most of the dressing but not all at once just incase there is too much. Mix it all together again.

  • Once fully mixed, sprinkle the extra paprika on top for garnish and add the remaining green onions. Refrigerate until needed. Good for 2-3 days.


MAKE IT EXTRA - Add in chopped red onion, cheddar and bacon to elevate the flavors. Mix well and sprinkle some on top!
