Campfire Blueberry Cheesecakes

Mmmmmm Cheesecake. Top 3 favorite desserts … its right up there with Key Lime Pie! It is nice to be able to make a modified one when camping. We can still enjoy the finer things in like even if it’s a less elegant version. This Cheesecake can either be made similar to a grilled cheese in a frying pan over the campfire or in a pie iron. The pie iron is easier but either works the same. We use blueberry pie filling but you can use any fruit filling you choose!

Ingredients

  • 3/4 Cup Blueberry Pie Filling

  • 4 Slices of Bread

  • 4oz. of Whipped Cream Cheese

  • 2.5 Tbsp. Butter

Directions (Using a Cast Iron Pan)

  • Place on a metal rack over the campfire and allow to heat up. Add 1 tbsp. of butter/margarine while the pan is heating up.

  • Lay out 2 slices of bread. Spread 1/2 the Blueberry filling on each slice and then spread a dollop of the whipped cream cheese on each as well. Take the 2 remaining slices and butter one side, then place the pieces of bread on top of each ‘dressed’ slice, butter side up..

  • Place the sandwiches on the pan butter side down and then butter the outside of the top piece of bread while the bottom is cooking. Once the bottom is browned, flip and allow the other side to cook. Once browned, remove from pan and serve.

Directions (Using a Pie Iron)

  • Butter 1 side of the bread and place into the bottom of the iron, butter side out then spread 1/2 the Blueberry filling on the slice lice and then spread a dollop of the whipped cream cheese as well. Take the remaining slice and butter one side, then place the pieces of bread on top of the ‘dressed’ slice, butter side up.

  • Close the pie iron and place in the fire to cook. Allow to cook about 10 minutes, checking to see if bread has browned. Once browned, remove from fire, open iron and place on a plate to eat. Complete these steps a 2nd time for the other pieces.
