Cajun Style Dirty Rice

We’ve gotten on this kick of CAJUN lately. Really feeling Jambalaya’s and Dirty Rice. Have you ever heard of Dirty Rice? Don’t worry, neither did we until we did some research. It is super simply and DAMN good. You do need to make a but of a roux .. which again, was something we weren’t necessarily familiar with prior to doing some research. It also is super easy and you will be WOW’d by the flavor that gets added to the dish.

Ingredients

  • 1 Lb. Ground Beef

  • 1 Cup Rice, cooked as per packaging

  • 1 Green Pepper, chopped

  • 3/4 White Onion, chopped

  • 1 Cup Celery, chopped

  • 3/4 Cup Chicken Broth

  • 4-5 Cloves Garlic, minced

  • 2 Tbsp. Margarine

  • 1 Tbsp. Flour

  • 2-3 Sprigs of Fresh Thyme

  • Salt to taste

  • Pepper to taste

Directions

  • Cook rice as per packaging and set aside to cool.

  • While the rice is cooling, add the margarine to a large pan and melt over medium heat. Once melted, add in the flour and continue cooking over medium heat. Stir constantly until a sludgy mixture is created.

  • Add the chopped veggies and sauté with some salt and pepper. Sauté about 5-7 minutes or until onions are becoming translucent. Add in the chicken broth.

  • Add in the garlic and fresh thyme. Continue cooking on medium heat. Finally, add in the ground beef and cook until fully brown. Add in additional salt and pepper as desired.

  • Once beef is fully cooked, add in the previously cooked rice, mix up and serve!
