Cajun Chicken Pasta

Comfort food + chilly days = perfection. This easy pasta with a kick is exactly what you need to warm up this winter.

Ingredients

  • 1.5-2 Cups Uncooked Penne Pasta

  • 1 Jar of Alfredo Pasta Sauce

  • 1/2 Cup Parmesan Cheese, shredded

  • 2 Chicken Breast

  • 2-3 Roma Tomatoes, chopped

  • 4-6 Cloves of Garlic, minced

  • 2-3 Tsp. JamDinners Cajun Seasoning

  • 1 Tbsp. Margarine

  • 1-2 Tsp. Salt

  • 1-2 Tsp. Pepper

  • 1-2 Tsp. Dried Parsley

  • Cooking Spray

Directions

  • Pre-heat oven to 375F degrees. Season both sides of the chicken with the cajun seasoning and place on a lightly greased baking sheet. Cook 30-35 minutes or until internal temperature has reached 165F or higher.

  • Cook the pasta in a large pot of boiling water as per packaging. Drain and set aside.

  • In a medium pan on the stove, melt the margarine and saute the garlic. Add in the jar of alfredo sauce and mix well. Stir in some salt, pepper and a little extra Cajun Seasoning to taste.

  • Stir in the pasta and mix well. Scoop into 2 bowls, thinly slice the chicken and lay on top. Add the chopped tomatoes, dried parsley and shredded parmesan cheese.

MAKE IT EASY - Use the jarred alfredo as we did without adding the extra garlic/salt and pepper. Keep it as is.

MAKE IT EXTRA - Use a creamy gruyere with the sauce and add shaved parmesan cheese on top instead of shredded.

MAKE IT VEGETARIAN - Swap the cajun chicken for a meatless alternative or season tofu the same way and cook as desired.
