Breakfast Burrito

Breakfast are one of the easiest things to make and my favorite thing about them is that you can throw in ANY extra vegetables you have laying around basically - peppers, mushrooms, spinach, onions etc. Grab whatever you want out of the fridge and throw it in! We kept ours simple but we did get to use up so veggies so that is a win!

Ingredients

  • 2 Large Tortillas

  • 4 Eggs

  • 1/2 Pack of Bacon

  • 1/2 Cup Cheese

  • 1 Cup Mushrooms, chopped

  • 1/2 Cup Green Pepper, sliced

  • 1/4 Cup Tomatoes, chopped

  • 1/4 Cup Green Onion, chopped

  • Salt & Pepper to taste

Directions

  • Cook bacon as per package directions and set aside. Keep the bacon grease in the pan and add the vegetables except the tomatoes to cook. Season with salt and pepper.

  • In a separate bowl, whisk the eggs together and add pepper.

  • Add tomatoes and eggs to the pan. mix well. While the eggs are beginning to cook, tear the bacon apart into small bite sized pieces and add back to the pan.

  • Cook and mix well until eggs are fully cooked.

  • Lay the tortillas out, sprinkle each tortilla with 1/2 the cheese then top with egg mixture and roll tight. Dip in Valentina’s hot sauce to really complete the dish.
