Blueberry Lemon Poppy Seed Waffles

I love lemon poppy seed anything and these waffles did not disappoint.

Prep Time: 15 minutes

Cook Time: 20 minutes

Serving Size: 6-8 Cakes

Ingredients

  • 2 Cups Pancake Mix (we use Harvest Moon but cheat by just adding water)

  • 1-1.5 Cup of Water

  • 3/4 Cup Fresh Blueberries

  • 1-2 Tsp. Evoolution Blueberry Balsamic Vinegar

  • 1-2 Tsp. Evoolution Sicilian Lemon White Balsamic Vinegar

  • 1-2 Tsp Lemon Juice

  • 1-2 TSP. Poppy Seeds

Directions

  • Combine all ingredients together in a medium bowl. Mix well but you want it kind of thick so if you added too much water, simply add in a little more mix! Heat up your waffles maker. Spray with cooking spray and scoop in decent sized portions of mix without going too heavy.

  • Repeat for as many waffles as you have mix for. Cook until both sides reach a delightful dark golden brown color (approx. 4-6 minutes).

  • Plate and serve with fresh blueberries, icing sugar and/or syrup!
