Blueberry Lemon Poppy Seed Waffles
I love lemon poppy seed anything and these waffles did not disappoint.
Prep Time: 15 minutes
Cook Time: 20 minutes
Serving Size: 6-8 Cakes
Ingredients
2 Cups Pancake Mix (we use Harvest Moon but cheat by just adding water)
1-1.5 Cup of Water
3/4 Cup Fresh Blueberries
1-2 Tsp. Evoolution Blueberry Balsamic Vinegar
1-2 Tsp. Evoolution Sicilian Lemon White Balsamic Vinegar
1-2 Tsp Lemon Juice
1-2 TSP. Poppy Seeds
Directions
Combine all ingredients together in a medium bowl. Mix well but you want it kind of thick so if you added too much water, simply add in a little more mix! Heat up your waffles maker. Spray with cooking spray and scoop in decent sized portions of mix without going too heavy.
Repeat for as many waffles as you have mix for. Cook until both sides reach a delightful dark golden brown color (approx. 4-6 minutes).
Plate and serve with fresh blueberries, icing sugar and/or syrup!
