BBQ Chicken Rice Bowl

Such a perfect and easy meal for a chilly Fall evening. We love using our crock pot and the Mr. bought me a small one for Christmas last year for small dishes or sauces etc .. turns out when you only have 2 chicken breast it is the perfect size and cooks the chicken so quickly. You can really throw anything together with the chicken too but this is our take. We wanted to replicate the taste/feeling of being in a classic BBQ joint but with a twist …

Ingredients

  • 2 Chicken Breast

  • 1-2 Cups BBQ Sauce of choice (we used Sweet Heat)

  • 1-2 Cups Rice, cooked

  • 1-2 Cups Coleslaw

  • 3/4 Cup Chili

  • 3/4 Cup Corn

  • 1/2 Cup Shredded Cheddar (Optional)

  • 1/2 Cup Green Onion, chopped

  • 1-2 Tsp. Salt

  • 1-2 Tsp. Garlic Powder

  • 1-2 Tsp. Pepper

  • Sriracha for extra flavor as desired

Directions

  • In a crock pot combine chicken, salt, pepper, garlic powder and 1 cup of bbq sauce. Cover and cook on high for 3-4 hours or until chicken is just fully cooked to 165F degrees.

  • Using 2 forks, shred the chicken. Add more BBQ sauce at this point if desired. Cover again and reduce heat to ‘warming’.

  • Prep the rest of the bowl starting with the rice and coleslaw as the base then top with chicken, chili, corn, green onion and cheese. Drizzle sriracha if you are looking for additional heat.
