Balsamic Steak Salad

This salad is a nice change from your typical salad. The combination of the steak with the balsamic dressing and the toppings .. it is SO GOOD. I could almost eat it every day and it as expected, it is incredibly simple.

Serving Size: 2-3

Ingredients

  • 4 Cups Romaine Lettuce, washed and ripped into 3 inch pieces

  • 2 Steaks (eye of round works best)

  • 1 Cup Creamy Balsamic Dressing

  • 1/2 Cup Dried Cranberries (optional)

  • 1/2 Cup Unsalted Nuts (optional)

  • 1/4 Cup Pumpkin Seeds

  • 1 Cup Crumbled Feta Cheese or Goat Cheese

  • 6-10 Cherry Tomatoes, halved

  • 1/2 Cucumber, sliced

  • 1/4 Red Onion, sliced

Directions

  • Heat BBQ to medium heat. Season both sides of the steak with salt, pepper and garlic powder. BBQ until desired redness is achieved.

  • Combine all ingredients together and split into 2 even portions. Slice steak, add to salad and drizzle with creamy dressing. I personally prefer to use the Bolthouse Creamy Balsamic dressing but whichever you decide and you can obviously change up or add toppings to the salad.
