Bacon Wrapped Mashed Potato Bites
What better way to spruce up our already delicious GARLIC MASHED Potatoes then to wrap them in bacon, oven bake them and add more cheese!
Serving Size: 6-8 Potato Cups
Ingredients
3-4 Large Red or Russett Potatoes, peeled and cubed
6-8 Slices of Bacon
1/2 Cup Parmesan Cheese
1/2 Cup Cheddar Cheese
1/2 Cup Milk
2-3 Tbsp. Margarine or Butter
1 Bulb of Garlic, minced or 2 Tbsp. Garlic Powder
Salt & Pepper to taste
Green Onion or Chives for garnish (*Optional*)

Directions
Fill a large pot 3/4 full with water and boil on the stove over high heat. Add the potatoes and allow them to cook until you can easily put a fork through them.
Once potatoes are soft, drain the water and then place the potatoes back in the pot, add all additional ingredients (except the parsley) into the pot and mash up the potatoes well.
Add more milk, margarine, garlic or spices as desired based on taste.
While the potatoes are cooking, pre-heat the oven to 350F degrees. Take the pieces of bacon and line 6-8 muffin cups with them. Cook about 15-20 minutes or until bacon is basically fully cooked. Check on them to ensure they keep their shape as best as possible.
Remove from oven, wipe excess oil and set aside. Once potatoes are good to go, scoop mashed potatoes into the muffin tins, ensure the bacon still lines the tins. Sprinkle with extra shredded cheddar cheese and broil on LO for 10 minutes or until the tops become golden brown.
Remove from oven and sprinkle with green onion or chives.
MAKE IT EASY - Do a simple mashed potato instead of the garlic mashed, or do them in muffin tins lightly greased with no bacon.
MAKE IT EXTRA - Swap the regular cheese for a Gruyere or use a thick hand cut bacon.
