Bacon Ranch Potato Salad

If you are usually in charge of bringing a side dish to your Easter dinner and you usually opt for an easy Caesar Salad because there is so many people and lets be honest, it can be a lot of work … I feel ya! This year though, Easter may be a little different for everyone given the COVID-19 Pandemic. This year it may just be your family of 4 or a small intimate gathering of friends. Instead of being sad that this Easter is likely to be different, rejoice in the fact that you still have your health and that this may be a good opportunity to do some fun Easter recipes instead and enjoy. This Bacon Ranch Potato Salad is both easy and delicious. It gives you the opportunity to experiment without creating a ton of extra work. A great side dish for Easter dinner this year!

Ingredients

  • 3 Large Russet Potatoes, peeled and cubed

  • 1/2 Pack of Bacon, cooked and crumbled

  • 1-2 Cups Shredded Cheddar Cheese

  • 1/2 Cup Sour Cream

  • 1/2 Cup Plain Greek Yogurt

  • 3/4 Cup Packet of Ranch Dressing Mix

  • 1/2 Cup Green Onion

Directions

  • Cook Potatoes until soft, drain and set aside. Combine the ranch dressing with the sour cream and greek yogurt. Mix well.

  • Combine the bacon, 1/2 the green onion, potatoes, cheese and ranch mix in a large bowl and mix well. Allow to sit in the fridge for at least 30 minutes.

  • When ready to serve, garnish with remaining green onion and enjoy!
